Vegan Mexican Food, An Emerging & Welcomed TrendJosh Scheper, a tall 46-year-old man, with locs in his hair, explained to NPR, that he felt out of place at the vegan Mexican food festival on a sunny Sunday morning, but loved it nonetheless. While people lined up at stalls for vegan Mexican food, it was noticeable that everyone was young and Latino, but the food wasn’t your usual ‘mushrooms from the hills of some far off land and $1,000,000 for a burger’ – it was reinvented meaty classics that were the heart and soul of Mexican cuisine. On offer were traditional dishes such as spiced pork from central Mexico, and sweet bread – ranchera music kept the lively atmosphere alight.
Vegan Latino cuisine has received some mainstream attention this decade, from New York City (where Erick Castro shares his Puerto Rican creations on Instagram at How to Be Vegan in the Hood) to Colombian-American cookbook author Carolyn Scott-Hamilton in Miami. However, on the West Coast vegan Mexican food has been gaining traction, with local festivals becoming the more mainstream, and occurring frequently in working-class neighborhoods such as Santa Ana, Ontario and Highland Park. The attendees aren’t the usual white hipster vegans that you’d normally see at festivals, but young hip Mexican-Americas who find out about them through social media or from friends.
It’s hard to gauge how many vegan Mexican-Americans there are, but the food isn’t too far removed from their ancestry. Prior to the conquest, most of Mexico’s indigenous were plant-based, all the meats came with the Spanish when they invaded.

Why Does Pregnancy Cause Weird DreamsWeird noises, feeling of falling, maybe a strange and elusive figure that you can’t quite see their face, but have a feeling that it’s your ex, David. You know – the one who dumped you in high school, on prom night and you haven’t thought about him in twenty years. Yep, welcome to the world of how wondering does pregnancy cause weird dreams, or is the lack of sleep from carrying around a bowling ball starting to drive you around the bend. Even, artist Cardi B, who added to her own family this July — tweeted about having “weird, crazy, spooky dreams,” writing in a second tweet describing that her pregnancy dreams were “too vivid.” And she’s not alone. Studies have found that pregnant women reported more nightmares and more intense dreams than nonpregnant women and that women in the last trimester of their pregnancies described more frequent nightmares during that stage than during the earlier trimesters.
Let Me SleepWhat is the cause of the mystery dreaming phases of pregnancy? It appears to be on a simplistic level, lack of the aforementioned. We go through five stages of sleep cycles, with one we’re all familiar with, rapid eye movement (REM). It takes the majority of our sleeping routine compared to the other stages, with 25% attributed to REM, which is when the majority of dreaming happens according to the National Institutes of Health. After initially falling asleep, we enter into a REM stage for an hour, and REM will cycle through your sleep cycle throughout the night. As we dream of sweet nothings or a spooky monster under the bed. your brain is actively sorting through recent experiences and emotions, and dreaming is thought to play a role in memory consolidation and processing new information, Dr. Ryan Donald, a physician and assistant professor of sleep medicine at The Ohio State University Wexner Medical Center, told Live Science. However, waking up during that rapid eye movement phase, and you’ll remember what was happening in the dreams – with pregnant women top of the list for waking up constantly. Leaving the question ‘does pregnancy cause weird dreams’ a mystery no more. “Rising progesterone levels in the first trimester can trigger insomnia — that’s fairly common,” according to Dr. Julie Levitt, an OB-GYN and clinical instructor at Northwestern Medicine in Chicago. That usually abates at 12 to 16 weeks into the pregnancy, but the onset of the third trimester, about 28 weeks and beyond, brings increasing physical discomfort that can disrupt nighttime rest, she explained. Her parents were extremely worried that she was hiding something from them, and understandably terrified at what exactly that could be. She had already started informing them of odd and weird stories about things that were happening, and the actions she had taken, even though they knew she hadn’t done them. They had started to blame themselves as failing as parents, and their sweet little girl was turning into something they control later down the line. When questioned about what they knew about their child, what she liked to do, or cared about. The parents displayed a lot of emotion, only recalling some funny stories of late, and nothing of real significance. It was then that everyone realized the parents really hadn’t paid much attention to their child or engaged with her in any meaningful way. Due to their schedules with work, it became apparent, that although they loved their child, they didn’t pay her much regard or interact with her much. Ms. Sandahl then spoke with the nine-year-old, to see if there was something else, in addition to the sudden realization in all parties.
The Lonely Soul
The psychologist found that their child was an intelligent and brave, but lonely little child. She was so lonely, that she had created this entire fantasy world, full of her favorite characters, who ultimately became her family in lieu of the real one that she did have. She crafted this fantasy world, where her family home was somewhere she just visited on occasion, and this new family in the fantasy world lavished attention on here when she had none. She felt real and real in this imaginary world. Being too young to articulate or understand why her family was not attentive to her, she expressed her loneliness by creating this brave new world for herself and made it her safe space to feel loved.
Being Present Is More Than Just a Body In The Room The human mind is creative and resilient, able to protect itself in every imaginative way, and children, with limitless imagination, will find a way to fill that void if parents are not attentive enough. Children need your full attention every day in order to thrive into full confident adults, and with the capability of being able to cope with harsh realities, they may face later in life.

The burger, produced by Impossible Foods, that has realistic blood due to the manufacturing process using yeast, causing it to sizzle when cooked, is cooking up a storm of its own. Documents accessed by Friends of the Earth under the Freedom of Information Act (FOIA) state that the “FDA believes that the arguments presented, individually and collectively, do not establish the safety of SLH for consumption, nor do they point to a general recognition of safety.” The FDA also noted that soybean is one of the most common allergenic foods.
The United States Food and Drug Administration (FDA) has yet to approve the ingredients in the new Impossible Vegan Burger and warns consumers against potential allergies that could arise from eating something that is foreign to them. “It is concerning that Air New Zealand is using its passengers as guinea pigs to trial the burger,” said Claire Bleakley, “The consumer preference for plant-based eating is based on ethical and genuine sustainability reasons.” It is not yet known if Air New Zealand has informed passengers of the unregulated ingredients, yet, we’re assuming the passengers know it’s a vegan burger.
“The GE product has failed to meet the regulatory safety standards and the decision to sell it makes Air New Zealand responsible if harm occurs,” said Mrs. Bleakley
“Whilst we applaud the move to vegan diets on Air New Zealand flights, the question needs to be asked as to why Air NZ would put itself in the position of ignoring other delicious innovative plant-based non-GE burgers, fitting the New Zealand Brand?” Yet, the more pressing question at the moment is, how soon can we get on an Air NZ flight to get our hands on the vegan burger?

There’s a new storm brewing between the agencies who oversee food in the United States, all relating to the emergence of cell-cultured meat that is set to dominate the market as trends unfold. On July 12th, the FDA held a town hall meeting to hold talks on the new industry that saves animals lives and can revolutionize the way the population views animal agriculture and it’s ‘need’ for it, especially as animal agriculture is the leading cause of greenhouse gas emissions into the atmosphere. The meeting occurred one month after the FDA proclaimed it had regulatory jurisdiction over the products, something the US Department of Agriculture (USDA) bristled at. The lengthy talks were attended by not only the clean meat creators but the animal agricultural groups, health advocates and animal welfare groups – all in the hopes of determining how the consumer ends with the product in the grocery aisle. Why The Tussle?The leading pioneers who are creating cell cultured meat are hailing the talks as a success, especially considering that a take over by the United States Department of Agriculture (USDA) would instill fears that regulation may not be as fair, or possibly even allowed to be named ‘meat’ While hailing it a success, it also highlighted the glaringly obvious that very little is known about the cell cultured meat industry. Claims from the start-ups that the meat would be available as early as next year for public consumption, regulators have claimed that no one has actually seen the product in person for inspection. “Samples of cultured tissue have not been available for evaluation of the safety, composition, functionality, and sensory properties to understand how it compares to meat from conventional animal production,” said Rhonda Miller, a Texas A&M University professor who often works with the American Meat Science Association.
Appeasing The Livestock IndustryThe US Pork Producers Council have voiced their opinions on the cell-cultured meat, “Already bearing the brunt of global trade retaliation against American agriculture, US pork producers now face additional headwinds in the form of a regulatory land grab by the [FDA],” they wrote in a statement. The group called upon the USDA to “assert its proper oversight” of cell cultured meat and the use of gene editing in livestock production. It is speculated that the American president, Donald Trump may weigh in on the issue, in an effort to appease American farmers. However, until then, the FDA appears to be motivated to hold on tightly to the regulations that govern the cell-cultured meat.

Trying to discipline a child the correct way can be a daunting task, especially if we were raised in households, where who shouted the loudest was the enforcer. Yet, a new way of child shaming has started to emerge, and that of parents humiliating their children, while live streaming it for not only the parents’ friends but the child’s peers also. Live streaming videos from cutting all a child’s hair off, to setting their gifts on fire, while live streaming the video for a captive audience, who view the humiliation as a reality televised series, where everyone is on a stage – is damaging our children’s mental health and wellbeing. One extreme case from 2015, with a parent named Jessica Beagley showed her live streaming a video of his child being forced to eat during hot sauce, while she hurled abuse at him in a freezing cold shower simultaneously. She was eventually convicted on child abuse – which in only resulted in a suspended sentence a small monetary fine. Another display of parental abuse was of a father who live streamed a video that eventually had forty-five million views, as she shot his daughters’ computer as a form of punishment. Under the unremorseful video, he commented. “Maybe a few kids can take something away from this… If you’re so disrespectful to your parents and yourself as to post this kind of thing on Facebook, you’re deserving of some tough love. … Today, my daughter is getting a dose of tough love.” Another father, who did not see the irony of his actions, forced his son to run in the rain after the son was accused of bullying. Reinforcing the belief, that you can take advantage of someone who is weaker than you, and make them do what you want.
Parents Weigh InThe majority of parents were fast to chime in about the new form of ‘punishment’. “Shaming and bullying/humiliating a child is never okay. Period,” Gabby Gamble, a mom of two from Champaign, Illinois, says. “As an adult, how would you feel if your boss screamed at you in front of 100+ employees and berated you about how bad you are?” Danielle Joyce, a mom of two from Phoenix, Arizona, notes, “I don’t agree with humiliating your child publicly as a form of discipline. This might make a temporary change in behavior, but in the long-term, I fear mistrust and anger towards their parents. We are putting things out there without their consent while expecting them to respect our authority as their parent. We are not their friends as a parent, we are the people teaching them to make good choices.”
Psychologists Warm Of The DangersChild-shaming online could potentially lead to “low self-esteem and crippling self-doubt,” explains Karyl McBride, Ph.D., LMFT, author of Will I Ever Be Good Enough? Healing the Daughters of Narcissistic Mothers. “The child is learning to mistrust others and their own feelings, causing a child to feel like a failure and a bad person.” Parents who lean on this form of discipline would do well to step up communication, points out Bela Sood, M.D., child and adolescent psychiatrist with Children’s Hospital of Richmond at VCU and Virginia Treatment Center for Children. “When I see parents resorting to these types of punishments, it signals a breakdown in communication,” Dr. Sood notes. “In other words, it shows a parent’s inability to convey their sense of expectations to the child. Making a child feel ashamed can further damage the relationship and hinder the child’s ability to build positive self-efficacy and self-confidence in the long-term.” She also says humiliating kids to address misbehavior is bad enough without the social media component, but “broadcasting the videos for the world to see only showcases the parent’s own bad behavior.” she explained to parents.com Dr. McBride recommends swapping shaming with empathy. “If we want to raise good people, we need to parent with empathy,” she explains. “Children need to be seen, heard, and validated. When they make a mistake, they need to be taught that we all make mistakes, and we can learn from them.” Ultimately, Dr. McBride believes “parenting should be about teaching, guiding, loving and modeling kind, empathic behavior towards others.” Not only is shaming and humiliating children “emotionally abusive,” but it “teaches them to be bullies and mean to others.” Any form of discipline that backfires in that way sounds best avoided. This week, federal regulators indicated that they are taking aim at plant milk and their use of the word ‘milk’, something the dairy industry has had an issue with for a number of months. It will hinder products such as soy and coconut drinks in the grocery stores from hailing themselves as an alternative to the cancer-causing dairy industry products. Commissioner Scott Gottlieb, who is a top executive at the FDA explained at an event in Washington D.C. on Tuesday, “The question becomes, ‘have we been enforcing our own standard of identity?’” Gottlieb said at the event. “The answer is probably not.” The FDA can’t just change the way it enforces a standard without warning, Gottlieb said. Because it plans to take a different approach to enforcement, he said the FDA will have to first develop guidance notifying companies of the change and ask for public comment. That guidance will probably be issued in a year, he said. The plant milk debate is joining a growing number of industries that have dominated the market for decades, and their claim to certain names for food products, such as eggs, mayonnaise. Leaked emails between the American Egg Board and the US Department of Agriculture in 2013, showed that the egg industry was behind an elaborate take-down of ‘Just Mayo’, naming them a ‘major threat’ to the industry, asking “What are we doing at AEB with regard to this competing product?? We need to have an answer!” Email exchanges among egg board members and affiliate groups asked “Can we pool our money and put a hit on him?” and suggested having “old buddies from Brooklyn pay him a visit,” referring to Josh Tetrick, the founder of Hampton Creek, renamed to ‘Just’. Unsurprisingly, in the more recent dispute towards plant milk, the National Milk Producers Federation, are welcoming the statement made by Gottlieb.

Break out the vegan butter, because nothing tastes as good as melting butter on a hot slice of this easy French recipe Baguette. Ingredients
Method
Step 1
Pour yeast in warm water in a large bowl; let stand 5 minutes. Lightly mix in the flour into dry measuring cups; level with a knife. Add 2 3/4 cups flour to yeast mixture; stir until a soft dough forms. Cover and let stand 15 minutes. Turn dough out onto a lightly floured surface; sprinkle evenly with salt. Knead until the salt is incorporated and the dough is smooth and elastic (average 6 mins); add enough of remaining flour, 1 tablespoon at a time, to prevent dough from sticking to hands (dough will feel really sticky). Did i mention that this is the most easy baguette recipe? Three steps, that’s it. Now onto step two.
Step 2
Place dough in large bowl coated with cooking spray, turning to coat top. Cover and let rise in warm place (85°), 40 minutes or until doubled in size. You can poke your fingers into the dough, if the indent stays, it is ready to go forward. Punch dough down; cover and let rest 5 minutes. Then cut into two pieces. Working with 1 portion at a time, ensure that you cover the remaining dough to prevent it from dying out, roll each portion on a floured surface into 12-inch rope, slightly tapered at ends. Place ropes on large baking sheet sprinkled with cornmeal. Lightly coat dough with cooking spray, and cover; let rise 20 minutes or until doubled in size. Preheat your oven to 450 degrees.
Step 3
Uncover the dough. Cut 3 (1/4-inch-deep) diagonal slits across top of each loaf. Bake at 450° for 20 minutes or until browned on bottom and sounds hollow when tapped. THAT IS IT! You have yourself an easy baguette recipe, if not the easiest baguette around! 100% vegan, and 100% delicious!
