I love this black bean and quinoa salad combo because you can easily get half of your protein intake in one meal without even trying. This salad is spicy with a little sweet and delivers a meaty texture. Itâs a great salad to make for a snack or a meal. My littles love to scoop it with tortilla chips, and itâs easy to throw in a mason jar for a take to work lunch, or my favorite, spoon it into a corn tortilla for a hearty taco filling. We also love to mix up the dressing and the vegetables in the salad to create different renditions of this quick and easy meal.
